You cannot legally handle food
Health department inspectors verify food handler cards on every visit. Expired cards are cited immediately.
The employee is pulled from food duties on the spot until recertified.
The restaurant pays the fine
Fines: $100–$500 per lapsed employee. Repeated citations can trigger permit review and public 'demerit' posting.
In some jurisdictions (Los Angeles, NYC), health grades are publicly posted — a demerit can drop a grade from A to B.
Certified Food Protection Manager is separate
Every food service establishment must have at least one Certified Food Protection Manager (CFPM) on-site, with a separate 5-year credential (ServSafe, National Restaurant Association).
Losing your only CFPM can shut down operations until replacement.
Renewal takes 60–90 minutes online
Most states use ANSI-accredited providers (StateFoodSafety, Learn2Serve, eFoodHandlers). Courses cost $8–$15 and issue instant certificates.
Some jurisdictions require in-person testing or classroom time — verify local rules.
Alcohol server certifications lapse independently
TIPS, ServSafe Alcohol, and state-specific bartender permits are separate documents with their own cycles.
Serving alcohol with an expired card typically brings fines to both the server and the establishment.
Renewal windows are short
Most food handler cards expire on a fixed 2–3 year cycle. Some jurisdictions allow renewal without retesting; others require full recertification.
